if you have limited its best to focus on the mongkok area. i've managed to make this map of it (note that its around 3 years old so it may not be that accurate anymore):

prices of model kits tend to be 20-30% cheaper compared to local gh shops.

side notes:
1. the sin tat building (3rd-4th floor) is the best place to get model kit spare parts and accessories.
2. the kwong wah area is the mecca for model kit shops. also its better to check each shop's prices first before purchasing a particular kit. the price differences is highly notable.
3. the shops definitely open around 4pm.
